DNC’s Great Sports Recipes: Buffalo Chicken Dip

I love having gatherings, especially around great sport events, like the Super Bowl and the World Series, especially if my Cards make it back this year. It gives me a chance to show-off my cooking skills but also allows me to dabble in those recipes that I wouldn’t normally make for just my family.

This is a recipe that I recently pulled out for my company’s chili-cook out. We needed some sides and since I haven’t had a good gather in a moment, I decided to pull this one out of my back pocket. The recipe is simple and quick!

I was first introduced to this masterpiece of dips back in my college town Columbia, MO by a former co-worker who was a native of Louisiana. I needed something that was quick, tasty and could fill a lot of bellies. After getting the recipe, I tweaked it and discovered a couple of alternatives and it became one of my favorite sports night treat.

So here’s the recipe:

Buffalo Chicken Dip

4 cups (or more) of Shredded chicken (fresh-baked chicken breast taste best)

1 cup of Ranch dressing (Cucumber Ranch gives you a less spicier taste)

2 cup shredded cheese (some use blue cheese instead)

1 pack or 8 oz of Cream Cheese

And my secret ingredient: 1/2 cup of Louisiana Hot Sauce

If you decide to go with a different hot sauce you be neglecting your tasters great flavor. Louisiana Hot Sauce has the perfect kick and flavor.

Mix all ingredients together in a crock pot and let it cook for at least two hours. Stir occasionally to avoid a hard crust on the top. It is ok if the cream cheese remains a little lumpy that just add texture to the dip. Once it is nice and simmered serve warm. This dip is great with tortilla chips or celery sticks, but feel free to use other veggies or special chips.

This makes about 15-18 servings or 2 large servings for 6 XL men!
